For those familiar with Bale Dutung, it is originally a restaurant in Angeles City that draws food enthusiasts from different parts of the country. It is owned by Claude Tayag, a Kapampangan chef and culinary legend, known for offering a delectable experience to those lucky enough to secure a table in this reservation-only dining establishment.

From a private dining space in the north, Tayag expands his restaurant to Araneta City, bringing the rich flavors of the Philippines’ culinary capital to the heart of Metro Manila.

Bale Dutung in New Gateway Mall 2 captures the familiar essence of its Pampanga counterpart. Stepping foot into the restaurant, one is immediately drawn to its rustic ambiance, with its rich wooden interiors setting the tone. After all, Bale Dutung is a Kapampangan term that translates to “House of Wood”.

The restaurant’s food offerings are just as enticing as its aesthetics. Bale Dutung features a delightful menu that includes signatures such as Trianggulo (crispy samosas with spinach, tinapa, and pili nuts), Lechon Taco (fried pulled lechon belly in basil coriander sauce), and Bringhe (sticky rice with chicken, chorizo, and quail egg).

Other must-try dishes include Kapampangan classics Kilayin (adobo sa puti), Ningnang Kapampangan (grilled sweet cured pork belly and hamonado longganisa), Hito Balo Balo (catfish belly with fermented shrimp), Ensaladang Pako (fiddlehead fern salad), and of course, Sisig.
